If only there were Margarita's ...

Today is Cinco de Mayo, and while to many that means it's the official day to drink margarita's, I decided to plan kid-friendly activities. Well, let's be honest, I didn't "plan" I thought about what I could do, and went from there. Unfortunately I failed to remember how annoying kids playing with maracas sounded....but I'm getting ahead of myself. Today we made paper towel roll maracas. The kids decorated the paper towel rolls with scraps of paper (like a collage) and we filled them with rice and beans....and then shake, and shake, and shake some more!

When my eyes finally started twitching from the sounds of these wonderful little maracas....I decided it was time to make lunch. For lunch we carried out the theme and had quesadilla's....which all of the kids told me they didn't like. It's funny, if you include a kid in the cooking process, they automatically like the food. So we made guacamole & cheese quesadilla's with sour cream and salsa. Not all of the kids used all of the dipping options, but it was fun to watch them try different things. Surprisingly all of the kids walked away from the table with their plates empty and their bellies full!!
